  24.04.2009 Recipes: Apple Pancakes

 

One of our all time favorites. Whenever we have a couple of days somewhere, we like to start the day off with some of these. You can of course substitute the apples for any fruit you have available to you.

Ingredients:

2-3 Apples (depending on size and type)

2 cups flour

2 tbls baking powder

1-2 eggs

Milk

Makes enough for 2 people...

Preparation:

Skin and cut apples into bitesize or smaller chunks, it is also possible to grate the apples if you prefer. The chunkier they are the more difficult it is to cook them evenly.

Add all the dry ingredients and mix well.

Add milk and egg(s) and stir until you have a consistent fairly liquid mixture. If you have grated the fruit, a fairly liquid mix is fine, if chunky then you might want a more solid mix.

Heat a frying pan, adding a little oil or butter. Drop in the equivalent of two heaping tablespoons of pancake mix per pancake and fry until golden brown on both sides.

Best served with butter and a syrup (maple if you can get it on the road). Also great cold as an "on the road" snack.

One of the most enjoyable things about traveling is tasting the local cuisine. Despite this, it is often necessary, or desirable to do your own cooking. The question is what and how. So here are some recipes which can easily be done while traveling, single stove/cooker, and usually one or two pots/pans will suffice. In addition we have found that the whole ritual of deciding what to cook, acquiring the ingredients and then spending the time to cook some "slow" food, it an excellent way to end the day, no matter where you are.
